Tempura BIMI

Serves 4




50g all-purpose flour, 50g cornflour, pinch of salt, 175ml cold water (carbonated water if possible), oil for frying and 400g BIMI.


  1. Heat the oil in the pan.
  2. Mix the two flours in a bowl with a pinch of salt.
  3. Make a well in the centre and add the cold water, mix until smooth.
  4. Flour the BIMI and cover with the mixture, then fry, remove and place on absorbent paper.
